Saturday brunch ramp egg pocket!
Slice any fresh bread, cut hole in center, save piece- here I used jalapeño cheese sourdough from the market.
Rinse and slice ramps, sauté in olive oil with chili flakes, add bread, let crisp on bottom a bit and flip over. Add egg to center careful to not break yolk, scoop ramps on top and pepper and salt, cook for a couple minutes and flip. [if you don't like runny eggs, cook longer.] Add center piece to pan, toast and crisp.
Remove all from pan, break open, add shaved Grano Padano, fresh pepper and salt. Enjoy!
