Baked French Toast

My mom's favorite way to make French toast. Using stale challah, soak overnight (either traditional slices or cubes if too dry to slice) in a mixture of eggs, milk of choice, vanilla, lemon or orange zest, vanilla extract, large pinch of turbinado sugar and a pinch of sea salt. Use two more eggs than you think you need so as to completely saturate (yielding more eggs per serving=more protein). Arrange bread in a buttered baking dish and pour well beaten mixture over to completely coat. Cover and refrigerate over night. You may then place the dish right into a 350•F oven or cook each slice separately stove top in a fry pan. Each serving will be nice and custardy in the center!
