Rainbow Summer Rolls (or, Hand Held Salads)
Mom always encouraged us to eat as many fresh veggies as we could! Choose your favorites and slice or julienne. Choose a green and fresh cilantro. Soften rice wrappers in hot (not boiling water). Layer ingredients and roll, turning sides in first.
Here: baby romain, avocado, mango, beet, radish, carrot, Persian cucumber, asst micro greens and fresh cilantro.
