Homemade Whole Wheat Bread for the win ?? recipe adapted from: "The Saturday Whole Wheat Bread" from Flour Water Salt Yeast by K Forkish..
Combine 3c whole wheat flour, 2 cup bread flour and 1 Tbsp sea salt.
Separate bowl, combine 1 Tbsp raw honey and 1 tsp yeast in 1/2 c warm water. Wait 10 min for it to become frothy, then add to 2c warm water.
Mix yeast/ water into flour, add more water if too dry or more flour if too wet.
Fold into a dough ball and place into large oiled bowl. Cover with towel and allow to rise for 5(ish) hours.
Pour out onto floured space, careful to deflate as little as possible, and shape into loaf. Transfer to a floured bread bowl. Allow to proof for about 1 hour.
Preheat oven to 475, Dutch oven with lid in the oven also. Once preheated, carefully put proofed loaf into Dutch oven, bake with lid on for 30 min. Remove lid and bake for another 20 min, until loaf is a good crusty golden brown..
