Process chopped lemongrass, ginger, garlic, lime leaves, fish sauce, coriander and stock into a loose paste. Fry the paste until think then loosen with coconut milk or a combo of both stock and the milk to make a sauce. Simmer seafood in curry, serve over cauliflower and garnish with veggies, oickled onions and Fresno chiles
