Quick #vegetarian #pasta #dinner: while wilting spinach in butter or olive oil on medium, separately cook pasta. Add smashed garlic to the spinach and turn pan down to medium-low. Crush a teaspoon or two of black peppercorns with a mortar and pestle. Add zest of one lemon to release some of the oils into the pepper as well. Add a splash of pasta water, cooked pasta, pepper mixture and a knob of butter to spinach pan and turn it up to medium to combine flavors and toast pasta a bit. Serve with microplaned Parmesan.
