Eggs in hell: sauté onion, garlic, and any cured meats you like in olive oil. Add crushed tomatoes and simmer. Season accordingly (I'll also add a dash of sugar to cut some acidity if needed). Crack eggs into sauce, top with cheese, cover and poach until whites set and the yolk is runny. Top with basil and serve over cheesy polenta. This dish is great for using up extra tomato sauce and cheese (aka leftovers from Friday night's pizza). #eggs #brunch #transformyourleftovers
