This makes for a nutrient dense #notsaddesklunch I used up a ton of little leftovers from the week. Throw small diced potatoes and chic peas into a pan with oil of your choice and let cook until potatoes are browned a bit. Then I added some steamed broccoli and green beans, diced tomatoes, roasted shallot, and a whole container of baby kale. Tossed it all around, added a splash of olive oil and balsamic to finish it off. Salt and pepper to taste. A total #notrecipe !
