Sear chicken breasts, skin side down until crispy in olive oil. Flip and Add to 400° oven and cook until 165°.
Meanwhile, render fat from bacon in hot skillet. Keep bacon fat in a separate bowl and remove bacon from skillet. Heat 1 tbsp of bacon fat and place halved trumpet mushrooms cut side down and cook for 3 mins until browned and crisped on the edges. Flip and cook 3 more mins on the other sides. Add whites of ramps and cook quickly until soft and fragrant. Add dark green tops and cook until just wilted. Stir in all but 1 tablespoon of bacon. Remove from heat.
Divide between two bowls. Top with sliced French breakfast radishes and remaining bacon. Slice chicken on an angle and gently place on top of the ramps. Serve.
