Vegetarian Breakfast Tacos. In a pan, add olive oil and then 1 large tomato cut in half and diced cherry tomatoes. Add chopped onion, a clove of garlic, a pinch of cumin, oregano, hot pepper flakes, and salt. Once the 2 pieces of large tomato is soft, peel off the skin.
In a second pan, fry corn tortillas in olive oil (or any oil). Remove the tortillas and fry eggs any way you like. Put eggs on the tortillas and then add tomato mix on top. Avocado on the side.
