One pan Sunday roast with new potatoes, broccoli rabe, and Italian sausage.
To start, heat oven to 475 degrees F. Cube or slice 1.5 pounds of new potatoes, then toss in a boldly flavored vinaigrette: 1 tablespoon of whole-grain mustard, 2 tablespoons sherry vinegar, 1 teaspoon smoked paprika, 1 teaspoon fennel seeds, 1/4 cup olive oil. Take casings off a few Italian sausages, cut into bite-size pieces, and nestle among the potatoes. Roast until the potatoes are tender and sausage is cooked through, about 25 to 30 minutes. Take pan out of oven, and add a small bunch of broccoli rabe that's been trimmed into small pieces, tossing to coat with the fat in the pan. Return to oven and roast until broccoli rabe is tender, another 5 minutes or so. Serve as is, or shave some pecorino over the top. #sundaydinner
