(Pre-oven) 40 clove garlic chicken (courtesy of Alton Brown). But wait, you say, potatoes don't go in that dish. Ah, but that's no potato, it's elephant garlic (in my best Star Wars voice).
Put some canola oil in a pan/container you can stick in the oven, fry the chicken briefly to brown it a bit, and then cover it with garlic, rosemary, thyme, and olive oil. Stick it in the oven for 1.5 hours and then eat every last bite!
