It's Sunday so I'm prepping lots of healthy eats for the week. Tonight was a big batch of veggies sautéed in coconut oil to serve as a bed for protein tonight and during the week. So easy to do and makes weekend dinners so much easier!
Pick your veggies of choice (I typically go with rices cauliflower, sliced Brussels sprouts, large diced asparagus, sliced scallions, minced garlic, and chopped up Swiss chard) and sauté in coconut oil. Salt and pepper to taste.
