My healthier version of a grain salad! Sprouted mung beans, tossed with sautéed shaved Brussels sprouts, fennel and onion, raw green apple, tamari roasted pumpkin seeds, and micro greens. Tossed in a Meyer lemon vinaigrette and topped with an avocado rose! It's delicious with a hard, salty cheese in place of the avocado as well.

Reclaiming Yesterday, sautéing fennel is a great way to bring out the sweetness and cut the intense anise flavor that so many veer away from (I personally love it both ways)!
