Leftover roasted butternut squash with za'atar, topped with a coriander & hazelnut pesto of sorts:
1 large bunch of fresh coriander + roasted hazelnuts + 2 cloves garlic + olive oil + lemon juice + nutritional yeast (can be replaced with Parmesan), all whizzed up, but not too much to keep some crunch in the nuts; and then added to roasted tomatoes & garlic to create something even more tasty ?? flavour overload!
