I discovered how to make acai bowls and I cannot get enough!
I love when the acai is very thick. It has taken me a while to perfect this, but I think I have it. Combine 1/8 cup unsweetened vanilla almond milk (Califia is the way to go), 2 packets frozen acai (do not let it thaw at all), 1/2 avocado, and a handful of spinach. I used a Vitamix and had to use the tamper because there is very little liquid in this, but the result is a smooth, creamy, and thick acai base that you need to eat with a spoon.
I topped with pomegranate seeds, kiwi, cantaloupe, blueberries, slivered almonds and a dusting of shredded coconut.
