Pancakes: In blender combine 1/4c leftover mashed sweet potato (plain), 1/2c rolled oats, 1/2c homemade ricotta, 1 egg and a glug of whey (leftover from making the ricotta yesterday), pinch of salt and shake (or two) of cinnamon, blend till smooth adding more whey if necessary.
Cooked on stovetop cast iron griddle about 4 minutes per side and topped with leftover sliced peaches that were tossed with a little coconut sugar yesterday and some pure maple syrup.
