Making-it-up baked chicken tonight: onions, fennel, garlic cloves, thyme and lemon quarters. Halved salad potatoes on top. Chicken thighs on last. Good splash of white wine and olive oil, plenty of salt and pepper. Cover with foil and bake for an hour, then uncover for half an hour to brown the chicken.
