Ramp galette. Through together a basic dough with flour, butter, salt, ice water. Roll out to preferred shape. Arrange ramp leaves. Top with egg yolk mixture (pepper, salt, piment d'espelette). Grate pecorino on top. Cook in 375 oven for about 30 minutes. While it rests, brush with a bit of white truffle butter.
