This coconut cherry pie baked oatmeal produced no leftovers because we ate the entire pan....

Mix rolled oats, almond milk, vanilla, maple syrup, cinnamon, frozen dark cherries, flax egg and toasted shredded coconut. Throw in the oven at 350 for about 40-45 min. Boom, breakfast.

Hi Jennifer! I essentially followed a baked oatmeal recipe I've used before for the base - 2c oats, 1 3/4c almond milk (unsweetened, plain), 2 flax eggs, 1 tbsp turbinado sugar, pinch of salt, 1/4 c maple syrup and 1/4 coconut oil. Mix dry and wet separately and then together. For the cherries and toasted coconut, I eyeballed to my liking (i.e, the more the merrier!). As for baking, my oven required a longer bake time to crisp up, but even slightly soggy it was great!!

Forgot about the vanilla - that was an eyeball measurement, as well!
