Stuffed Butternut Squash!
Cut squash in half (watch those fingers!) and scoop out seeds. Butter and salt the squash meat and bake at 400 degrees until tender. After baking add any stuffing you want. Mine are stuffed with bulgar wheat salad made of bulgar, kale, dried cranberry, golden raisins, roasted onion and garlic.
