Red Lentil Coconut Curry Vegetable Stew!
Veggie hearty with chicken stock, red lentil, cauliflower, carrot, zucchini, onion, kale, and garlic. I sautéed the veggies in a little bacon fat and added a can of coconut milk to give the soup some dimension and mouth feel. Ended up tasting like a cross between Indian and Thai food. Spiced it up with curry, turmeric, ginger, and chili oil. Serve with rice or grain of your choice for added umph! Great, healthy, stick to your ribs kind of meal.
