Balsamic pasta salad- quick, easy, healthy lunch or side dish. Very flexible recipe, add or adapt ingredients as you like.
Boil rotini pasta, set aside to cool.
Chop: 1 green bell pepper, 1 yellow bell pepper, 3 Persian cucumbers, handful of cherry tomatoes. Mix with pasta.
Chop up some chicken breast (boneless, skinless). Season with salt, pepper, basil, and garlic. Sauté until cooked, drizzling with some balsamic while cooking. Mix chicken with pasta and veggies.
Toss whole thing with a mixture of balsamic vinegar, olive oil, lemon juice, salt, pepper, and any Italian spices you like. (I used basil, garlic, and oregano this time).
Enjoy immediately, or refrigerate and eat later.
