Veggie burrito bowls
Beans: sauté tomato paste + spices in a saucepan until toasted. Add onions, then jalapeños, then tomatoes, then hot chiles. Simmer and let tomatoes break down. Add beans, let simmer, mash some as they cook.
Meanwhile, sauté or roast bell pepper, onion, and broccoli (or whatever veggie combo you like) until charred but still with some crisp.
Layer bowl with beans, veggies. Top with queso fresco and any other toppings on hand (avocado, tapatio, fried egg, etc).
