Quick shaved asparagus pasta based on a Naturally Ella recipe. Get your pasta water boiling and salted and cook the pasta to your liking, reserving a bit of cooking liquid. Shave 5 or 6 fat spears of asparagus with a vegetable peeler and set aside. Chop 6 scallions, I used both white and green parts. Cook scallions in a pan with a bit of olive oil until almost brown, add shaved asparagus and toss, then cover and cook for a minute or two. Remove lid and add a healthy glug of white wine and let it evaporate. Add a pat of butter to the asparagus mixture and then add it into the pasta along with a bit of the reserved water, some lemon zest, Parmesan, pepper, salt, and another bit of butter if you like. Toss aggressively and finish with more pepper, Parmesan, lemon to taste, and a shower of fresh herbs like basil or parsley.
