Polish Mushroom Soup: cover about two cups of dark dried mushrooms generously with boiling water and let soak until water has cooled. Pour both mushrooms and soaking liquid into a large pot, being careful to avoid any grit that's settled to the bottom of your soaking bowl. Add some sliced fresh mushrooms, broth (traditionally beef, but I use vegetable, or mushroom if I have it), one large onion grated directly into the pot, and a few grinds of black pepper. Cover and bring to boil, then lower heat and simmer for approx. 1 hour. Season to taste with salt, and serve over egg noodles with a dollop of sour cream. #momtest
