Sauté a few handfuls of kale, mix in sweet potato chunks (again, bless the leftover gods), quinoa, some diced red bell pepper, jalapeño salsa, two egg whites, a drizzle of sriracha, some slivered almonds, garlic, s&p, and your favorite spices! Not the most kicked-up version, but quick enough to get right back to the grind. Enjoy your lunch!☀️
