For years I baked nothing but sourdough. The starter came from Nancy Silverton's La Brea Bakery book. The recipe calls for grapes as the source of yeast. I'll never forget the first time I pulled the plastic wrap back and went in for a hardcore sniff. It took my breath away but when I got it back is when the sweet smell of yeasty champagne came crashing in. I baked beautiful breads with that starter for 10 years and then one day it went south. I think it had simply given me all it could give but it now smelled like old gym socks. Surprisingly I didn't make a new starter. I knew how much flour had been wasted keeping that thing alive, countless bags over the years. I guess I felt responsible for its care but after its passing I said no more. I managed to steer clear all these years. Then the other day I was reminded of Peter Reinhart's whole grain baking book and I remembered his starter. I remembered it being small amounts of flour until you build the "biga". Essentially it is a one time use starter. This is day 1. #Sourdoughstarter #sourdough #baking #PeterReinhart #bread
