The quintessential Korean summer dish I learned from my mum! Samgyetang aka ginseng chicken soup. Soak about a cup of glutinous rice in water for 2 hours. Peel 2 garlic bulbs, cooked chestnuts and wash a small sized organic chicken. Rub it with salt and rinse well. Stuff it with the rice, garlic cloves, ginseng and chestnut. You can add dried jujubes too! Stitch up the hole and put it in a large pot with about 5-6 cups water. Boil and simmer for an hour. Salt soup to taste. #momtest
