The mother of all spring burgers. Mix together 500g turkey mince, chopped onion, minced garlic, chopped chives, thyme leaves, lemon zest, an egg yolk and seasoning. Form into 4 burgers. Heat oil in a pan on high and sear the burgers on both sides, before covering with a lid and turning down to medium. Cook for 10 minutes, or until all the pink is gone from the centre. Serve in a lightly steamed Spring green leaf with avocado, Comte cheese, caramelised onions, and tomato.
