Spanish omelette! Super easy and simple, requiring only a few ingredients;
Salt & pepper
Baby spinach (optional)
Cherry tomatoes (optional)
Cut the onions and potatoes into small cubes and cook with the olive oil until tender, scramble the eggs and pour over. Cover and let it cook on low heat for 5-10 min until sides are coming apart from the pan. Flip upside down onto a plate and slide the omelette back into the pan to cook the other side for a few min. I topped mine with some baby spinach and cherry tomatoes. Enjoy!
