Singapore Style Noodle Stir Fry: a great way to use up vegetables in the fridge. Half pound pork tenderloin, cut into thin strips and marinated for an hour or more in soy sauce, brown sugar and Sriracha. Brown meat in a little oil, then set aside. Stir fry two cloves minced garlic and an equal amount of minced ginger. Add vegetables: bell peppers, celery, green onions, mushrooms, carrots, cabbage (or whatever combination of vegetables desired). Once vegetables are tender crisp, add in two tablespoons curry powder and cook a minute until fragrant. Add in a few tablespoons each: oyster sauce, soy sauce and a couple teaspoons fish sauce and honey. Lastly, add in brown rice vermicelli noodles (that have soaked/and more boiled and drained. Toss to combine noodles with meat, vegetables and sauce.
