Making some upgrades on weeknight chicken breast is as simple as buying breasts with the skin-on. It alone will add loads of flavor. This is a vermouth sauce, notice I didn't mention cream because while there is a splash in there the foundation begins with a mother sauce– velouté and in this case it is a chicken velouté chicken. If you are so inclined just use cream and forget the velouté, me I am trying to watch my figure. Sauté the chicken in a large pan. When you have browned both sides remove it to a plate. Add a little more butter to the pan and sauté a slew of mushrooms, once they have browned douse them with some vermouth. Reduce it. Add some velouté and reduce again, and just for giggles add a splash of cream and a rainstorm of parsley, not a monsoon but a nice spring drizzle. How do you finish cooking the chicken?
