When faced with the mid-week "what's for dinner" challenge, farro salad always had your back. This version is laden with slow-roasted cherry tomatoes from our freezer stash, plus lots of parmesan pebbles (chopped with a knife), a big handful of toasted, slivered almonds, and a few of the first herbs from our garden. The dressing is a few glugs of good extra-virgin olive oil and a mix of sherry and balsamic vinegars. #weeknightdinner #farro
