Oatmeal Caramel Chocolate Chip Cookies
1 cup unsalted butter, soft
3/4 cup granulated cane sugar
3/4 cup brown sugar
1 teaspoon pure vanilla
1 large egg
1 2/3 cup unbleached all purpose flour
1 2/3 cup old fashion rolled oats
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1 270g bag milk chocolate chips
20 or more good quality chewy caramels, roughly chopped
Mix butter and sugar for a few minutes, until slightly fluffy. Beat in egg and vanilla.
In a separate bowl, blend all dry ingredients (flour, oats, baking soda, powder, salt).
Add dry ingredients to wet, stir in chocolate and caramel. Refrigerate dough for at least an hour. Preheat oven to 350. Divide dough into balls, flatten balls and bake on parchment lined baking sheet for 10-14 minutes (depending on size of cookies). Makes about 24 cookies.
