Every night my dinner is a little weirder than the next! Here, I roasted a sweet potato. A purple sweet potato—was feeling funky. While the sweet potato roasted, I blanched broccoli and set it aside. Then I sautéed chopped tempeh in canola oil until crispy, then added sliced garlic and the cooked broccoli. I stirred until everything was warm and the broccoli was browning. I dollop in a sauce—I used harissa, tahini, fish sauce, and lemon juice—and added the potatoes, too. I finished with a drizzle of sesame oil! And lastly, a fried egg—fried in very hot oil into which I had dissolved za'atar. Ta-daaaaaa!
