Missing my grandma so much I made her ultimate Flan Recipe brought down from my grandmother to my mother and now to me :) It's pretty much like eating a cloud of vanilla and caramel; even the cat wants some ? Still, Grandma always makes it the best (because she adds that extra secret ingredient; a grandmother's love ?).
1. Blend 5 eggs, 1 can of evaporated milk, 1 can of sweet condensed milk, 2 tsps of vanilla, and a pinch of salt in a blender till well combined.
2. Heat up equal parts white sugar and water in a round baking pan on the stovetop till a caramel coat is created. Let cool for 15mins.
3. Pour the Flan mixture onto the pan and cook in a bain marie for 30 minutes in medium high heat. Turn stove off and let sit for 30 more minutes or until it is cooled. Move to fridge and let it completely cool for about 3 hours.
