Tomato & Pancetta Tart | I marinated slices of tomato in chopped basil and balsamic vinegar. Start with ready-rolled puff pastry, sprinkle over freshly grated Gruyere cheese, layer in tomatoes, and finish with crispy bits of pancetta. Season with salt and pepper and bake at 375 for 30 minutes. Let cool before serving, and then dress in Arugula and balsamic glaze.
