I couldn't help myself. The infamous Slow Cooker Balsamic Glazed Pork was just begging to be cooked sous vide. Obviously the appeal of this dish is in the "set it and forget it" notion. The thing is, if you use a slow cooker you could float a pork loin or tenderloin in lard for 6 hours and it will still be a sip-of-beer-with-each-chew kinda meal. In short, it's so dry it gives you the hiccups causing everybody to thump on their chest like a family primates. On the other hand, I cooked this pork loin sous vide for 8 hours at 135 degrees and it was super tender, sliceable but it could be cut with a fork. As for the sauce, I made as directed and, well, I would use half the brown sugar, dried cherries, and balsamic. I would set it over low heat and let it reduce to a syrup then strain it (forget the water and cornstarch slurry they just muddle things up) #slowcooker #sousvide #dinnerathome #porkroast #pork
