Slow cook chicken thighs with 1 can of chipotles in adobo sauce. Shred with two forks when ready. In a food processor, blend avocado, sour cream, lime juice, salt, and a roasted poblano to make a crema. Fill corn tortillas with chicken, crema, lime pickled onions & radishes, jalapeño, cojita cheese, and cilantro.
