I love Thursday nights. The weekend is almost here and I get to be creative with dinner based on what's left in the fridge and pantry from the week.
Tonight, baked eggs with garlic sweet potato fries, black beans, and spinach. Easy. Healthy. Delicious. ?
Preheat oven to 500. Line oven-safe dish or ramekin with your favorite ingredients. Create two wells and place eggs. Sprinkle with salt and pepper. Place in oven for approximately 10 mins until whites are cooked and yokes are still soft.
