Green chile chicken enchiladas with salsa verde sauce! First make the sauce: 1/2 cup cream, large handful cilantro, 1 cup salsa verde, I small can chopped green chiles and blend. Next make enchilada filling: 2-3 grilled/shredded chicken breasts, 3 green onions chopped, table spoons cream cheese, 1 cup shredded jack, mixed all together in bowl. Next, small skillet with 1 inch of oil and fry 12 corn tortillas individually for 5-10 seconds. Pour half of sauce into bottom of baking dish and divide enchilada filling individually between each tortilla, roll and place neatly in baking dish. Pour remaining sauce over enchiladas and sprinkle Colby jack cheese over top, place sliced Roma tomatoes over enchiladas and bake at 350 for 45 minutes!! So yummy you'll want to eat them all!
