Low Carb Loaded Taco ???
With lemon chicken, spicy sausage, caramelized onion, charred broccoli, avocado, tomatoes, and hot sauce
Lemon chicken: Bake 400° until internal temp reaches 165°, slice thin, reserve juices
Sausage: Cook ground sausage in skillet (I used a chorizo and spicy pork combo)
Quick caramelized onion: Slice yellow onion, brown in small skillet, season with salt/pepper, deglaze pan with champagne vinegar, add some sausage + grease, cook until done
Charred broccoli: Ditto onion method, using small broccoli florets
Spinach: Wilt spinach in chicken juices (and I combined this with some leftover mushroom ragout from a couple posts back)
Tomatoes: slice grape tomatoes into 2-3 pieces, sprinkle with smoked salt and black pepper
Taco: Add ~1 oz shredded cheese to a cold pan. Turn heat on med. When it starts to bubble, pour 1 egg, scrambled, over cheese. Cook until set.
Add ingredients in rows in taco, fold, enjoy!
