Dice two large onions and mince 5 garlic cloves. Sauté them in olive oil or butter on medium heat until softened. Season with salt, pepper, cumin and pepper flakes (optional) Dice 3 - 4 Lebanese/Armenian sausages (soujok) and add them to the pan until they get a color on the outside. Tip 2 cans of chopped tomatoes and some water, and simmer to reduce a bit. Crack 5-6 eggs carefully in the sauce and cover to cook the tops. Turn off the heat at your preferred egg consistency. Garnish with coriander and spring onions and scoop with arabic bread
