Best ceviche ever!!! 1 lb steamed shrimp, 1 pound raw scallops, 1 cup diced cucumber, 1 cup diced tomato, 1/2 cup diced red onion, 1 cup diced mango, handful chopped cilantro, 1 cup fresh lime juice, 1/4 cup fresh lemon juice, 1/4 cup fresh orange juice, salt and pepper to taste. Let sit for two hours for the scallops to "cook". Add diced avocado right before serving. Serve with tortilla chips and some great sangria!
