Last nights roast chicken was simmered with an onion, 2 cloves of garlic and a bay leaf. Let cool and strain broth and debone chicken. Return to pot and add a large can of diced tomatoes, black beans, cumin and a bit of Cajun seasoning. To thicken soup you can add corn tortillas, tortilla chips or corn meal. Garnish with sour cream, cheese and tortilla chips.
