Nice lazy #vegetarian or #vegan bean lentil stew
Sauté a bunch of onions over medium high so they get a little brown. Add garlic, ginger, carrots, and whatever spices you're feeling. I used coriander, cumin seeds (I added them with the onions), smoked paprika, cinnamon, clove, Aleppo pepper, a squirt of Harissa, and sumac. Add cooked lentils, canned lentils, or even a couple cartons of high-quality lentil soup, a can of chickpeas, a big can of diced fire-roasted tomatoes, and some dried red lentils. Thin out with some water or vegetable stock, add a bay leaf and some split red chilies, and simmer until the lentils have fallen apart and thickened the stew. Serve with lemon, Aleppo pepper, yogurt, or mint and cilantro (or all of them) and toasted bread or warm pita.
