Quichey Bread Pudding
It's cear the fridge/freezer night!

Toasted a bunch of random bread odds & ends that had collected in the freezer

Defrosted at 350° until soft enough to cut with kitchen shears, ~5-10 min… cut into small cubes, returned to oven to toast until crunchy, ~10 min

Caramelized onion with some juices I had reserved from previous meatloaf dinner*… added a few handfuls spinach and cooked until wilted… turned off heat, added large spoonful herbs de Provence mustard and the last bit of leftover mushroom ragout*

Directly in baking dish, scrambled 6 eggs with 4oz water that I had used to deglaze a pan that I'd cooked sausage in yesterday that looked too flavorful to discard (otherwise I'd say use milk or broth or whatever)

Add bread cubes to egg, stir to coat

Add veggies, season with smoked salt, black pepper, cayenne, thyme, rosemary… gently stir to evenly distribute

Add cooked sausage leftover from previous taco dinner*… ditto stir

I had 2 kinds of cheese in the freezer… don't ask me what kinds ?… crumbled the softer of the two into dish, gently stirred… grated the firmer cheese over the top

Seasoned top with sprinkling of cayenne, nutmeg, smoked salt, black pepper

Baked at 350° for about 40 min

Let cool for ~15 min
