Friday's late lunch: Mash 3/4 ripe avocado in a deep bowl. Add your fave vinaigrette ingredients. Mine are olive oil, apple cider vinegar, Dijon mustard, salt, pepper, a drop of honey and herbs, and mix into the avocado. Make zucchini noodles. Stir into avocado dressing. I added julienned greens and cabbage and topped with grated radish and fresh turmeric root.
