The greengrocers had artichokes this morning, so I'm steaming an artichoke for lunch. In the rice cooker, because that's my steaming setup. :) Pour in water up to just below the level of the steaming rack. Add a preserved lemon, minced garlic, a bay leaf, a little bit of salt, and a sprinkle of thyme. Trim the stem off of your artichoke, then put the steaming rack in and nestle your artichoke upside down on the rack. Steam for 30-45 minutes. Serve with your choice of dipping sauce; Hollandaise is classic, as is mayonnaise, but if you're like my husband and don't like eggs, you can do a lemon butter sauce.
